Vegan Chia Seed Pudding

Chia seed pudding can be a nice breakfast or a casual snack for health-conscious people. No need gelatine powder, chia seeds will taste just like pudding after fully absorbing plant-based milk.

Chia seeds are the seeds of sage and considered the healthy ingredients. They are rich in plant-based protein, Omega-3 fatty acids, and dietary fibre. Chia seeds have the magic to form gel once they absorb enough liquid. 

Without a strong taste, chia seeds are popularly used with vegan milk and yogurt as light meals. Today, we are going to make a healthy and yummy pudding with Roots Apricot Kernel Drink and Chia Seeds.

Preparation time: 15 minutes

Prepare the ingredients:

  1. Chia Seeds: 2tbsp
  2. Roots Apricot Kernel Drink: 300ml
  3. Fresh fruit: Moderate amounts

Preparation:

  1. Add chia seeds, Roots Apricot Kernel Drink, or other plant-based milk to a container and stir to combine.
  2. Let stand for 10 minutes and stir again until there are no lumps.
  3. Refrigerate for at least 2 hours or overnight.
  4. Finally, add your favorite fresh fruit before serving and enjoy.

Tips: There is no added sugar in this recipe. If you prefer a slightly sweeter taste, you may consider to add some honey.
